There are few flavor combinations I love more than beets and goat cheese. The sweetness of the beet with the creamy pungent goat cheese is pure heaven. This salad combines those flavors, and adds a sweet dressing to tie them together. The walnuts give a great earthy texture, and the pear adds so much flavor. I love this salad, I have no idea where I got the original recipe, but I have modified it considerably. When I made this the other evening, I wanted a dinner salad, so I added cubed chicken to give it some substance, but it’s great as a side salad or a lighter meal on its own.
