shrimp salad recipes

I am sort of a lentil fanatic, I like all types and in all kinds of dishes.  I was looking for an interesting shrimp salad and read through several recipes on line before coming up with this.  The curry and honey add a great flavor combination that goes perfectly with the earthy lentils and spinach.  I used red lentils in this salad because of the color, but they’re a bit trickier to cook than green lentils – you really need to pay attention to them as they simmer, because they go from perfect to mushy super fast.  If you get them just right though, they’re perfect in this salad – and also add a great color contrast with the spinach.

  • Yield : enough for 4 large salads

  • Cook the lentils ahead of time according to package directions until just tender – about 20 minutes, then allow to cool.
  • To make the dressing, combine mint, lemon juice, mustard, honey and curry powder and mix well. Slowly whisk or pulse-blend in the olive oil until the dressing begins to thicken.
  • Combine the spinach, pepper and mushrooms, toss in about ½ of the dressing to coat well.
  • Arrange spinach on plates, and top with lentils and shrimp.
  • Drizzle the remaining dressing over the top.
  • Enjoy!
