I am sort of a lentil fanatic, I like all types and in all kinds of dishes. I was looking for an interesting shrimp salad and read through several recipes on line before coming up with this. The curry and honey add a great flavor combination that goes perfectly with the earthy lentils and spinach. I used red lentils in this salad because of the color, but they’re a bit trickier to cook than green lentils – you really need to pay attention to them as they simmer, because they go from perfect to mushy super fast. If you get them just right though, they’re perfect in this salad – and also add a great color contrast with the spinach.
