I had been wanting to try a recipe using salted caramel sauce for a while now and this week decided to try it with coconut and make these mock girl scout cookies samoa bars. I am glad I did, because they are so delicious. The combination of sweet and salty is balanced perfectly by the chocolate, and the crunchy cookie base is the perfect setting for the chewy coconut. I could not have been happier with how these bars turned out.
