I am a wife and mother of two and I love to cook. I also love to travel, work and spend time with friends. With all that goes on in my life, it is a challenge for me to get a home-cooked meal on the table for my family every night.
However, I learned recently that it is not that hard after all. It just requires a little structure and planning. One of the first things I did to get myself organized was to pick a meat for each day of the week. Then I made sure that my freezer is always stocked, so there is no excuse not to keep the schedule.
This week is not a typical week for me. I am traveling through Peru while my kids are in Denmark with my husband and in-laws. But that does not mean I haven’t thought about what a delicious week of recipes could look like.
My inspiration for this week comes directly from the amazingly fresh ingredients in the Latin kitchen: beans, corn, tortillas, spices, etc., and ending the week with a good piece of meat.

the ultimate veggie burger
This recipe makes a lot of patties, and they keep well. So I am never without these veggie burgers in my freezer. I haven’t met a single person yet who does not rave about the flavor and texture, including my kids. They are well worth the effort!
simple sour cream enchiladas
Chicken is one of my favorite meats, as it is versatile and picks up the flavor of almost anything. This recipe is so easy. To balance the richness of the recipe, all you have to do is throw together a simple lettuce salad, and you have dinner.
I cannot get enough salmon; besides, this is one fish that my whole family is also crazy about. This week I am recommending serving it with avocado black bean salsa, as it gives it that South American touch that is inspiring all of my cravings this week. Add a bit of corn if you want a heartier salsa, and you can call this a meal. Done!
individual mexican pizzas
Any kind of pizza that I serve is well received by everyone in my house. Thursdays are usually the day that everyone is feeling tired and ready for the weekend. I find that ground beef recipes are some of the most fun, hearty and comforting. And this one is no exception!
steak au poivre
Start the evening with a glass of wine and some snacks to tide everyone over. Then get in the kitchen and cook up something special. My husband and I love to entertain, and Friday is one of our favorite days as the culinary expectations are low (we have been working hard all week), but the energy is high (it’s the weekend!). My personal favorite for a Friday evening is a good piece of meat.
