What you need:

Breakfast sausage

Red bell pepper

Garlic

 Heat a large skillet over medium-high heat and cook the sausage until cooked and no longer pink. Break the sausage into small pieces as it cooks.

Reduce the heat to medium and add the onion and red pepper to the skillet, cooking for a few minutes until tender, then add the minced garlic and cook for 2 minutes.

Beat the eggs in a large bowl and whisk in the milk.

Stir in the cooked vegetables, sausage, frozen potatoes, 1 cup of shredded cheese, and season with dry mustard, salt, and pepper.

Pour the mixture into the prepared casserole dish and top with the remaining cheese and chopped green onions.

Bake in the preheated oven for 40-45 minutes until the eggs are firm and the top is slightly golden brown.

Cooking Tips

Add the frozen hash browns or cubed potatoes straight from the freezer rather than defrosting them, as they will release too much liquid that will affect the texture of the dish.
