Ground beef

Green pepper

Start by adding about two tablespoons of olive oil to a large 12-inch cast iron skillet over medium heat. Brown the ground beef, onion, and green pepper. Cook together until ground beef is no longer pink and the vegetables start to soften. Drain off any fat.

Next, add the canned tomatoes, uncooked rice, Worcestershire sauce, garlic, salt, pepper, and chili powder. Stir well.

Cover the cast iron skillet with an oven-safe lid or with aluminum foil.

Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius). Bake a covered skillet for 35-45 minutes or until the rice is tender.

Use a fork to fluff the rice.

Sprinkle with shredded cheddar cheese and freshly chopped parsley.

Serve immediately, accompanied by a toasted baguette.

Cooking Tips

Rinse rice under cold water a few times until the water runs close to clear. This action removes the starch in uncooked rice and makes it less gluggy.

Once you have pulled the skillet out of the oven and fluffed the rice, immediately add the shredded cheese and parsley, then cover it again and let it stand for a few minutes until the cheese melts.

You can boost the flavor of the homemade tomato sauce by adding a tablespoon of tomato paste.
