Set a large soup pot over medium-high heat with a tablespoon of olive oil and add the sliced onions, carrots, and celery for 5 minutes until the onions are soft.

Add the roasted minced garlic and cook for another 30 seconds until fragrant.

Stir in the flour and cook for another 1-2 minutes, then add the chicken broth and canned crushed tomatoes.

Stir to combine and bring the soup to a boil before reducing the temperature to medium heat. Cover the large pot, and cook for 30 minutes, stirring occasionally.

Stir ¾ cup of the cream into the pot. Season to taste with salt and pepper.

Garnish each bowl with a drizzle of the remaining heavy cream, fresh basil, store-bought or homemade croutons, and a crack of pepper.

Cooking Tips

If you like a thick soup, cook it for a longer time to thicken. Add some more chicken broth to make it thinner.
