Cook the bacon pieces in a large pot over medium-high heat until brown and crispy.

Add the sliced sausage to the pot and cook until they're brown on both sides. Remove the cooked sausage to the plate with bacon.

Add the ground beef, onion, and garlic to the pot and brown until it is no longer pink. Sprinkle with chili powder, salt and pepper, and paprika, and cook for 1 more minute.

Add the can of diced tomatoes with the tomato sauce, 2 cans pinto beans, green chilies with liquid, whole corn, potatoes, cooked bacon, sausage, and beef broth.

Bring the stew to a boil, then immediately reduce the heat to simmer. Cover the pot and simmer for 1 hour, stirring occasionally.

Remove the pot from the heat and garnish with chopped parsley.

Serve with a freshly sliced baguette and a dollop of sour cream.

Cooking Tips

Make the stew more filling by cooking half a bag of frozen mixed vegetables into the stew when simmering for an hour.
