Heat oil in a large skillet. Add your chopped onions and garlic, and cook constantly stirring until translucent.

1

Add ground beef and cook over medium-high heat until browned.

2

Add taco seasoning, tomato paste, and water, simmer while stirring until it thickens a bit and is incorporated into the beef.

3

Add the creamy refried beans, half of the cheese, and salsa in a medium saucepan and cook over medium heat until hot.

4

Spread half of the corn chips on the bottom of a 9 x 13 casserole dish.

5

Pour and spread the bean mixture over the top.

6

Then cover with the rest of the corn chips.

7

Spoon the taco meat on top of the chips.

8

Sprinkle on the remaining cheese the sliced olives.

9

Bake for about 20-25 minutes, or until cheese is melted and the casserole is heated throughout. Top with desired taco toppings.

Cooking Tips

You can customize the seasoning to meet your flavor preferences.

01

Instead of buying a bag of pre-shredded cheese, grate your cheese.

If possible, use homemade taco mix.

If you like veggies, add plenty and mix it up.
