What you need:

Jasmine rice

Yellow bell pepper

Red onion

Parsley

Get a mandolin or box grater and grate the carrots into a large bowl. Add the diced bell pepper, red onion, tomatoes, finely chopped fresh parsley, cooked rice and mayo.  Mix everything together with your hands or a large spoon and season with salt and pepper.

Cover and refrigerate the bowl for 30 minutes before serving.

Cooking Tips

If you're not using leftover rice, make sure the cooked rice is completely soft, drained well, and cold before mixing it into the salad.
