Slice the onion, carrot, and celery into small pieces and the basil into strips. Set a large soup pot over medium-high heat with a tablespoon of olive oil and add the sliced onions, carrots, and celery for 5 minutes until the onions are soft.

Stir in the flour and cook for another 1-2 minutes, then add the chicken broth and canned crushed tomatoes.

Stir to combine and bring the soup to a boil before reducing the temperature to medium heat. Cover the large pot with a lid, and cook for 30 minutes, stirring occasionally. Use an immersion blender to blend the soup until it's completely smooth.

Stir ¾ cup of the cream into the pot. Season to taste with salt and pepper.

Garnish each bowl with a drizzle of the remaining heavy cream, fresh basil, store-bought or homemade croutons, and a crack of pepper.

Cooking Tips

If you like your soup on the thicker side, cook it for a longer time so that it reduces and thickens. Add some more chicken broth if you like it on the thinner side.

If you're using a regular blender, allow the soup to cool slightly before blending. Hot soup + blender = big mess.
