Heat the oil over medium heat in a cast-iron skillet.
Add potatoes, pepper, and onion to the skillet and cook for 8 minutes until the onions and pepper begin to soften, stirring occasionally.
Increase to medium-high heat and add the ground beef, stirring and cooking until the beef is cooked through and the potatoes start to brown.
Whisk the eggs and pour them on top of the ground beef and potatoes. Allow them to set slightly, then gently fold them into the mixture until they're cooked.

Cutting the potatoesIt's important to cut the potatoes into small equal-sized cubes so that they cook quicker and at the same time. The bigger you cut them, the longer it will take to get them nice and soft.Remove the starch from potatoesPlace the diced potatoes in a bowl of cold water and let them sit for 30 minutes to remove some of the starch. This will prevent the potatoes from sticking to the skillet.Add liquidIf you want to add some liquid to your ground beef and potatoes skillet recipe, you can add ½ cup of beef broth.
