Finely dice the onions, garlic, and bell pepper.
Preheat the oven to 350 degrees Fahrenheit (177 degrees Celsius) and grease a casserole or baking dish with nonstick cooking spray, and set aside.
Cooking instructions
Heat a large skillet over medium-high heat and cook the sausage until cooked and no longer pink. Break the sausage into small pieces as it cooks.
Remove the brown sausage to a plate lined with paper towels to soak up the grease.
Reduce the heat to medium and add the onion and red pepper to the skillet, cooking for a few minutes until tender, then add the minced garlic and cook for 2 minutes.
Beat the eggs in a large bowl and whisk in the milk. Stir in the cooked vegetables, sausage, frozen potatoes, 1 cup of shredded cheese, and season with dry mustard, salt, and pepper.
Pour the mixture into the prepared casserole dish and top with the remaining cheese and chopped green onions.
Bake in the preheated oven for 40-45 minutes until the eggs are firm and the top is slightly golden brown.
Remove the baked casserole from the oven and let it rest for 10 minutes before slicing it into squares and serving.
