Preparations
Dice the onions and garlic cloves into smaller cubes and then set them aside.
Cut the green bell pepper in half lengthwise and remove the seeds and ribs from the inside of the pepper. Cut the pepper into coarse squares and then set aside
Remove ground beef from freezer/refrigerator and let it warm to room temperature
Shred the cheese using a hand grater and chop the fresh parsley.
Cooking instructions
Start byadding about two tablespoons of olive oil to a large 12-inch cast iron skillet over medium heat. Brown the ground beef, onion, and green pepper. Cook together until ground beef is no longer pink and the vegetables start to soften. Drain off any fat.
Next, add the canned tomatoes, uncooked rice, Worcestershire sauce, garlic, salt, pepper, and chili powder. Stir well.
Cover the cast iron skillet with an oven-safe lid or with aluminum foil.
Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius). Bake a covered skillet for 35-45 minutes or until the rice is tender.
Use a fork to fluff the rice.
Sprinkle with shredded cheddar cheese and freshly chopped parsley.
Serve immediately, accompanied by a toasted baguette.
