A cucumber sandwich is a light, refreshing, and easy-to-make sandwich that is perfect as an appetizer, lunch, or snacks.
What you need:
Wash and peel the cucumbers.
Dice the red onion and chop the fresh dill.
Combine the softened cream cheese, mayo, chopped dill, lime juice, sugar, and salt. Use a hand mixer or spoon to mix well.
Cut cucumber slices into ⅛ inch using a mandolin or sharp knife.
Cut the crusts from the bread to make squares.
Lay half the bread slices onto a cleaned table and spread 1 tablespoon of cream cheese mixture on top.
Place thinly sliced cucumber, fresh cracked black pepper, and additional freshly chopped dill on top of the cream cheese spread.
Place the second piece of bread on top, then carefully cut the cucumber sandwiches into 4 triangles or squares.
Allow the cream cheese to come to room temperature before mixing so that it spreads easily.
When making the easy cucumber sandwiches, cover your work surface with plastic wrap for quick cleanup.
