Flour - All-purpose flour is the best flour for making crepes as it gives the best texture.

Milk - Use room temperature milk for crepes as it helps to prevent lumps in your batter.

Eggs - Eggs help to give the crepes a light and fluffy texture.

Butter - Helps to create a non-stick surface when cooking the crepes.

Salt and sugar  - Perfect to enhance the flavor of the crepes.

    Substitutions

If you don't have all the ingredients in this recipe, some substitutions can be made.

    Milk
You can substitute regular dairy milk for non-dairy milk, like almond milk, oat milk, or coconut milk.

    Flour
Almond flour can be used in place of all-purpose flour for a nuttier flavor.

    💭 Cooking tips

    Chill the crepe batter

Chilling the batter before making crepes helps to relax the gluten and makes your crepes lighter.

    Don't overcook them

For soft, easy-to-fold crepes, make sure you don't overcook them. Once the edges start to curl up and the crepe easily comes away from the bottom of the skillet, it's time to flip it over. The crepe should be lightly browned on the bottom but still have a pale color.

    Spread the batter evenly

Make sure to swirl the batter as soon as you pour the batter into the skillet so that it evenly spreads out into a thin layer.

    📖 Recipe Variations

This delicious crepe recipe is made for the best of both worlds! You can fill and fold your freshly made crepes with savory or sweet ingredients, but if you want to make them sweet or with a different texture, here are a few variations to the batter that you can try.

    Chocolate crepes

To make chocolate crepes, add 3 tablespoons of cocoa powder to the batter.

    Sweet crepes

Add ¼ cup of granulated sugar to the batter for a sweeter crepe.

    🥗 What to serve with

Crepes are the perfect comfort food! Whether you're making savory or sweet crepes, there are plenty of delicious toppings and fillings to choose from. Here are some great ideas for what to serve with your freshly made crepes:

    Sweet fillings

Fresh berries and fruit: Fill your crepes with fresh fruit, like mango, bananas, pineapple, strawberries, and blueberries. Try my delicious crepe cake recipe.

Top with yogurt and honey: Add some Greek yogurt and a drizzle of honey to your crepes.

Maple syrup and whipped cream: A classic combination that never fails! Simply add some maple syrup and a dollop of whipped cream for the perfect sweet treat.

Banana & Nutella: Spread some Nutella on the crepe and add a few slices of banana to enjoy this classic combination.

Powdered sugar and cinnamon: Sprinkle some powdered sugar and cinnamon for a simple but delicious topping.

    Savory fillings

Ham & cheese: For a savory crepe, roll them up in some shredded cheese or cheese slices and deli ham for a delicious breakfast or lunch.

Smoked salmon with cream cheese: Spread a layer of cream cheese over the crepe and place slices of smoked salmon on top for something creamy and salty.

Mushrooms, spinach & feta: For an even more flavorful savory crepe, add some sautéed mushrooms, spinach, and feta cheese to the mix.

Scrambled eggs with bacon or sausage: For a more filling crepe, sauté chopped bacon or sausages and make scrambled eggs.

These are just some of the many fillings you can have for your crepes, so let your imagination run wild and creative.

    🙋 Frequently asked questions

Is crepe batter the same as pancake batter?

No, crepes are like very thin pancakes that do not contain a rising agent, like baking soda or baking powder. Pancakes have a thicker batter and rise during cooking.

Can I make crepe batter ahead of time?

Yes, you can make crepe batter ahead of time. You can prepare the batter and refrigerate it in a bottle or jug for 2 days. Make sure you give it a good stir before using it.

    🧊 Storing and ♨️ reheating

If you have leftover cooked crepes, you can store and reheat them for another quick breakfast or lunch.

Fridge - Stack the leftover crepes with wax paper in between each crepe on a plate covered with plastic wrap or place them in an airtight container. Store them in the fridge for up to 3 days.

Freezer - You can also freeze crepes by stacking them on a plate in batches of 6 to 8 with parchment paper in between. Once frozen, store them in freezer bags or a freezer container for up to 4 months.

Reheating - The best and quickest way to reheat leftover crepes is to microwave them for 30 seconds or quickly warm them in a hot skillet for 1 to 2 minutes.
