Making this delicious soup is easy. All you need to do is combine the veggies, chicken, chicken stock, herbs, and spices in the slow cooker, switch it on and let the machine do the work.
Preparations
- Chop the onion, jalapeno, garlic, cilantro, and both bell peppers.
- Drain and rinse the black beans.
Cooking instructions
Step 1
Drizzle some olive oil into the slow cooker, turn to high heat, add the peppers, onion, and jalapeno, cooking for about 20 minutes or until just beginning to soften.
Step 2
Add the remaining ingredients, combine well and turn the heat to low.

Slow Cooker Chicken Fajita Soup
Ingredients
- 2 tablespoon olive oil
- 1 red pepper - sliced
- 1 green pepper - sliced
- 1 medium onion - sliced
- 1 jalapeño - seeded and diced
- to taste salt and pepper
- 1 tablespoon cumin
- 1 packet fajita mix seasoning
- 5 chicken breasts - skinless and boneless sliced
- 32 oz chicken broth
- 14 oz diced tomatoes
- 1 jar salsa - chunky
- 1 cup corn - frozen
- 15 oz black beans - drained and rinsed
- 1 bunch cilantro - minced
- 2 cloves garlic - minced
- 1 bay leaf
Instructions
- Put the oil in your slow cooker and turn to high. Add the pepper, onion and jalapeno and allow to cook for about 20 minutes, or until just beginning to soften.
- Add the remaining ingredients, stir well and lower the heat to low. Cook for about 6 hours, or until the chicken is cooked through.
- Remove the bay leaf and discard, then remove the chicken pieces with tongs and shred with a fork. Return the chicken and cook for another 30 minutes before serving.
- Garnish with sour cream, shredded cheddar and crispy tortilla strips.
