    It uses the same flavorful ingredients associated with the classic Mexican chicken fajitas with cooked chicken breast, fajita seasoning, colorful bell peppers, corn, black beans, all delicately put together in soup form with the aid of a slow cooker.

    The recipe is entirely foolproof that any home cook can make without any cooking skills, as the slow cooker does all the work for you, giving you plenty of free time to do other stuff while the soup gently cooks over several hours.

    Chicken fajita soup has the best of both worlds with sweet and spicy flavors throughout and has become a family favorite in my house for lunch or dinner.

    It's the perfect soup for devouring during the colder winter conditions and the best way to enjoy chicken fajitas without the mess and time-consuming cooking process.

    🍽 The ingredients

    Jalapenos: You can use mild or hot jalapenos; it all depends on your spicy level. Just make sure to take the seeds before dicing them.

    Chicken breasts: Please use fresh chicken breast from the butchers if possible, rather than packaged, and make sure it is skinless and boneless. You could also use a rotisserie chicken and strip the chicken breast from it.

    Tomatoes: I always use fresh diced tomatoes for soups to produce a stronger flavor. Use a good quality variety of tomatoes.

    Substitutions 

    Like all soup recipes, the ingredients can be substituted for equal alternatives.

    Seasonings

    The main seasonings for this soup are fajita or taco seasoning to provide that authentic Mexican flavor.

    If you are running out of taco seasoning, you can combine 1 teaspoon chili powder and ½ teaspoon cumin for the perfect substitution.

    Chicken fajita soup made in a slow cooker is absolutely delicious. Learn how to make it with my simple instructions and top tips.

    Making this delicious soup is easy. All you need to do is combine the veggies, chicken, chicken stock, herbs, and spices in the slow cooker, switch it on and let the machine do the work.

    Preparations

    • Chop the onion, jalapeno, garlic, cilantro, and both bell peppers.
    • Drain and rinse the black beans.

    Cooking instructions

    Step 1
    Drizzle some olive oil into the slow cooker, turn to high heat, add the peppers, onion, and jalapeno, cooking for about 20 minutes or until just beginning to soften.

    Step 2
    Add the remaining ingredients, combine well and turn the heat to low. 

    Step 3
    Cook for about 6 hours.

    Step 4
    Remove the bay leaf and the chicken pieces. Shred the chicken with a fork and cooked the shredded chicken for another 30 minutes.

    Step 5
    Serve immediately.

    Garnish suggestions: sour cream, shredded cheese, diced avocado, tortilla chips, chopped cilantro, green onions.

    💭 Cooking and expert tips

    • Add the salt and pepper to the mixture once the beans are tender (usually after an hour). Adding salt too early will slow the softening process.
    • Make sure to thoroughly rinse the beans to take away any bits of dirt or stones. Completely submerge them in the broth.
    • To make tortilla chips, heat some oil in a skillet over medium heat, and cook each tortilla for 30 seconds on each side. Cut them into strips and serve at the side of the soup for dipping.

    Vegetarian tortilla soup

    If you want to have this excellent soup in vegetarian form, just omit the chicken and chicken broth for more black beans and vegetable broth. It tastes just as delicious.

    Beef fajita soup

    It's hard to choose between beef steak and chicken breast in this soup.This beef version uses quality steak like sirloin or rump, and when it's cubed and slow-cooked for several hours in the slow cooker, it melts in your mouth. The soup also uses beef broth instead of chicken.

    Ingredients
     

    • 2 tablespoon olive oil
    • 1 red pepper - sliced
    • 1 green pepper - sliced
    • 1 medium onion - sliced
    • 1 jalapeño - seeded and diced
    • to taste salt and pepper
    • 1 tablespoon cumin
    • 1 packet fajita mix seasoning
    • 5 chicken breasts - skinless and boneless sliced
    • 32 oz chicken broth
    • 14 oz diced tomatoes
    • 1 jar salsa - chunky
    • 1 cup corn - frozen
    • 15 oz black beans - drained and rinsed
    • 1 bunch cilantro - minced
    • 2 cloves garlic - minced
    • 1 bay leaf

    Instructions

    • Put the oil in your slow cooker and turn to high. Add the pepper, onion and jalapeno and allow to cook for about 20 minutes, or until just beginning to soften.
    • Add the remaining ingredients, stir well and lower the heat to low. Cook for about 6 hours, or until the chicken is cooked through.
    • Remove the bay leaf and discard, then remove the chicken pieces with tongs and shred with a fork. Return the chicken and cook for another 30 minutes before serving.
    • Garnish with sour cream, shredded cheddar and crispy tortilla strips.
