    I have made at least 15 different versions of banana bread, each one with different fillings, like peanut butter, chocolate chips, carrot, orange, and this recipe with cream cheese, to name a few. They all taste delicious, stay fresh and moist for up to 4 days, and with kids around, banana bread is fantastic as an excellent quick and tasty snack.

    The cream cheese batter I use here gives the original banana bread recipe a creamy twist throughout, and with the added crunch of toasted walnuts, it has everything you want from banana bread! Have it for breakfast or as a warm dessert with a healthy scoop of ice cream and maple syrup, you decide!

    A few things to note when buying the ingredients. Choose the ripest bananas you can find, or let them sit at room temperature for a few days until they start developing brown spots or going black.

    The secret to know when the bananas are at their ripest is when you think you should throw them away. They become sweeter and easier to mix the longer they mature in their skins.

    The baking soda used in this recipe helps the banana bread to develop air bubbles giving it an airy, soft texture, and the cream cheese filling with ripe bananas keeps it moist throughout the baking process.

    The eggs should be fresh if you want a fluffier cream cheese filling. Fresher eggs have a brighter yolk that gives cakes a creamier and fluffier texture!

    Preparations

    • The first step in making the cream cheese banana bread, like many other recipes, is to preheat the oven to about 350 degrees.
    • Also, before we begin preparing the banana bread batter, we need to grease two bread pans with cooking spray. This is what the banana bread batter is going to bake in.
    • Next, put the skillet on heat for about 3 – 5 minutes. Then put the walnuts in the dry skillet and roast them on medium until they give off their signature smell. This means they're ready. Take them off the heat and allow them to cool off.

    Mix the melted butter and cream cheese in a medium bowl until they're properly combined and have a creamy mixture.

    Then add in the granulated sugar and the light brown sugar, and continue to mix until thoroughly combined.

    Add in the vanilla extract with the cream cheese filling and beat the mixture until it's all combined once more.

    Follow this up by adding in the two eggs, one after the other.

    In the separate bowl, sift the all-purpose flour, baking powder, baking soda, and salt together.

    When they're mixed properly, add them to the cream cheese mixture bowl and mix slowly until combined once more.

    Stir in the mashed bananas.

    Add walnuts into the mixture until everything is once again mixed thoroughly. This is the banana bread batter that is going to go into the loaf pan.

    Pour the cream cheese banana bread batter into the prepared loaf pans, making sure it's nice and evenly spread.

    Bake the banana breads for about 1 hour, checking them after 45 minutes to see if the mixture comes clean when sticking a toothpick through it. If the toothpick comes out clean, take the banana bread out of the oven and let it cool.

    Lay your cream cheese banana bread out on a cooling rack to cool for a quarter of an hour while still in the pan.

    Once it is cool completely, turn the pan upside down on a chopping board and tap its top. The cream cheese banana bread should come from the pan easily, and then slice it and enjoy!

    How do I know when banana bread is ready?

    The toothpick test is a tried and true test and essential when modifying a recipe or switching pan sizes. When baking, time is a suggestion and by no means exact. Everyone's oven is different (gas, electric, convection), and many are inaccurate. Baking times also vary based on moisture content in bananas, climate, and elevation.

    Why is my banana bread still gooey in the middle?

    I usually keep a close eye on my banana bread for the last 5-10 minutes. As soon as I think it might be ready, I open the oven door and slide a toothpick into the bread or muffin. Just stick a toothpick into the center of your banana bread. If there is wet batter still on the toothpick, it needs more time in the oven. If it comes out clean, your bread is done!

    Why is my banana bread not fluffy?

    Not fluffy banana bread is usually the result of an overmixed batter. When making banana bread, gently combine the wet and dry ingredients. Don't overmix! The more you stir, the more gluten is formed.

    💭 Cooking tips

    • The more bananas you use in the recipe, the less sugar you'll need. This is because bananas are rich in natural sugar and are sufficiently sweet. So the more concentrated the banana mash is, the less artificial sweetness you'll need.
    • As much as it is tempting to open the oven to check if the banana bread batter and cream cheese layer are baked properly, I recommend not opening the oven for at least 45 minutes into the process. Opening the oven door will result in it caving in due to the temperature dropping and ultimately will stop it from rising and becoming airy.
    • Adding cream cheese mixture to the banana bread does taste delicious, but if you cannot find it or don't like it for some reason, you can substitute it for sour cream or Greek yogurt and still establish a similar flavor.
    • If you're on a ketogenic diet, this recipe can also give you a fantastic tasting alternative to your regular meals. By switching all the ingredients for their keto or vegan counterparts (such as coconut oil for butter, flax egg for the eggs, and so on), you can make banana bread that's perfect for your diet and still certified delicious.

    As well as chopped walnuts like I use in this recipe, you can also add hazelnuts, almonds, pecans, and dried fruit like raisins, coconut, figs, peach, etc. Adding nuts and dried fruit to the mixture makes the bread denser once baked but keeps it moist with the juices from the ripe bananas and fruits.

    Chocolate chip banana bread

    I love this version to eat as a dessert! Simply add chocolate chips to the batter in the prepared loaf pan and swirl some melted soft or crunchy peanut butter through.     Cookie dough bites

    Cookie dough fans, beware! You can either use readymade cookie dough or make your own and then make little balls with it. Pour half of the batter into the loaf pan, add the dough bites on top, then pour the remaining batter evenly over. BAKE, REST, and ENJOY!

    Similar to eggs benedict, but with a sweater base! 80% of the time, this is what I eat with my banana bread for breakfast. To make this simple recipe, slice up 1 avocado, place them on top of the bread, make a perfect yolky poached egg and rest it gently on the avocado slices.

    Banana bread french toast

    I prefer this to classic French toast with a rustic loaf! The method is the same. The only difference is using banana bread instead of a loaf.

    Mix 1 teaspoon vanilla extract and equal quantities of milk and egg to make the batter, cut the banana bread into thick slices and soak them in the batter before cooking them in a hot skillet.     This cream cheese-filled banana bread is fine at room temperature, covered with a large kitchen towel, foil, or other clean covering.

    Fridge
    If you'd rather keep your cream cheese banana bread in the fridge, you can cut it up into slices and wrap each one with saran wrap or aluminum foil. Then store in an airtight container for easy access.

    Freezer
    Find an airtight container and wrap your cream cheese-filled banana bread in saran wrap or foil before putting it in there. It should last about half a year frozen like this.

    Ingredients
     

    • 1 ½ cups walnuts - roughly chopped and toasted
    • ¾ cup butter - softened
    • 200 g cream cheese - softened
    • ½ cup white sugar
    • ½ brown sugar
    • 2 eggs - large
    • 1 teaspoon vanilla extract
    • 3 cups all-purpose flour
    • ½ tsp baking powder
    • ½ tsp baking soda
    • ½ tsp salt
    • 4 banana - medium, mushed

    Instructions

    • Preheat the oven to 350°F / 175°C and grease two bread pans.
    • Toast the walnuts in a dry skillet over medium heat until fragrant, about 3 – 5 minutes, then remove from heat and let cool.
    • Put the butter and cream cheese into a large mixing bowl and mix until blended and creamy.
    • Add the sugars, and beat well to combine.
    • Blend in the vanilla, and then add the eggs one at a time, beating after each one to blend.
    • In a separate large bowl, sift together the dry ingredients, then add to the wet and mix at a low speed, until just blended.
    • Stir in the bananas and walnuts.
    • Scrape dough evenly into well-greased bread pans, and bake for about 1 hour, or until a toothpick in the middle comes out clean.
    • Cool bread on wire rack for about 15 minutes, then remove from pans and allow to cool an additional 30 minutes before slicing, to avoid excessive crumbling.

      Did you not learn that you should not crack a raw egg directly into the batter as if the egg
      is rotten it will spoil the whole batch? Crack into a small dish before adding it to the batter.

      I’m always trying new banana bread recipes and this is by far my favorite one! I had to bake it about an hour and 20 minutes before it passed the toothpick test, so I was a little worried it would be dry, but it wasn’t. It was still very moist. I don’t ever put nuts in anything, but I substituted chocolate chips and it was amazing! I’m so thankful for the discovery of this recipe. Thank you.

      I made two loaves of this bread tonight and I followed the recipe almost exactly. THEY WERE DELICIOUS! After greasing my pan I sprinkled some cinnamon sugar along the bottom and sides and added some of the same cinnamon sugar to the top of the batter before baking. I also added an extra 3 ounces of cream cheese (which made for a nice moist loaf) and an extra half cup of chopped Pecans.

      I don’t eat bananas or banana nut bread but my sister sent me this and asked me to make it for her. It has been a huge hit! I’ve probably made it once a week since then. I love to make it and give it away! I also read in the comments someone sprinkled cinnamon and sugar in the pan after spraying and everyone seems to like that. Thank you!

      I make the same cake every Christmas use a yellow cake mix Add 1-2 eggs whatever the mix says 4 oz cream cheese nuts mix and makes 1 large or 2 small loafs

      i couldn't believe there was no cinnamon or cloves in the recipe, so I added my usual 1 tsp cinnamon and 1/2 tsp of ground cloves.

      Just let it finish cooling for a half hour out of the loaf pans, and it cut perfectly, and Oh my it is delicious! Thick but not heavy, and not dry! I used black walnuts, since that was what I had, I thought they might over power the banana taste, but they didn't! Great recipe!

      Baked it today! Replaced the nuts with chocolate chips. Thought it might be too sweet but was perfect. Was done at 55 minutes. Will take them out of oven even sooner next time. The grandkids will love this cake/bread. Having a slice with coffee. Second one in the freezer!

      I have a very similar recipe and it is delicious. The only difference is my recipe calls for 2 cups of sugar and no brown sugar. I grease and flour 2 loaf pans to make one loaf without nuts and one with walnuts. The last 15 minutes I cover them with foil so they don’t get too dark.

      Try putting 2 bananas and 1 cup crushed pineapple for a very moist alternative. Just drain the juice from the pineapple first.

      I have never made a banana bread for one reason only. Everyone and every recipe calls for to put it nicely aged bananas. Why ? What is the reason behind this? The banana that is called for is my hang up; cause I would normally be throwing them away because they have aged. Can you please explain why aged bananas? I love banana bread but I cannot get passed the aged bananas so I am hoping for a good explanation please.

        Aged bananas bake sweeter with a far richer banana flavor and smell the softer and blackened spotted banana you'd normally would throw away are the best for baking and mash creamy far easier just never use if any mold is smelled or seen most people would never eat extremely ripe bananas direct from the peel because the are unappealing looking but that's perfect for banana bread and why it was invented to begin with so instead of feeding overripe bananas to the rats in the town dump or trash pandas you still can enjoy a flavorful and delicious bread that carries an amazing smell ...don't belive me experience with two batches 1 with fresh bananas still at the stage that looks yummy to peel and put in your mouth and a second loaf made with yucky soft overripe unappealing bananas put side by side and first smell that will be your first clue on the superior overripe then get really brave and take a still warm slice I like mine with a little butter and tast each one the superior loafe will be evident I promise you'll never look at a repulsive overripe banana in discuss ever again that repulsion will turn I to a desire for another slice of warm banananie heaven 😋

        Ripe (aged bananas) are the gold standard for loafs, banana bread, and my cream cheese banana bread. I never use anything else!

      When I print this recipe it does not tell when to add the main ingredient BANANAS.

      Way back in the dark ages, when I had home economics in Jr High School, the teach told us to turn the temp down 25 degrees when using a glass baking pan.

      This is an amazing recipe. You can use the cream cheese icing on this banana bread, too. I only use 3 1/4 cup confectioners sugar and it's perfectly sweet without overpowering the cream cheese flavor.

      Peace be unto you.
      Made this last week and used a tube cake pan. Once it was done, let it cool and tried getting it out of the pan that had been coated with oil and lightly floured. Used a knife to loosen and it still wouldn't come out. Prayed that it would come out in one piece. Turned it upside down onto a plate and it hit the plate. I tapped the bottom of the tube and turned it over. It was all in one piece! Turned it over and omg! A perfect picture for a cake! Everyone loves the cake. My son, who is in school to be a chef and cooks at a hospital here in San Diego, thought the cake was fantastic!. He's making it for coworkers!. Best banana nut cake (used walnuts instead of recommended pecans). Will make this again. Have a blessed life.

      I made this today and mine sunk deep into the pans as it cooled and was so dense after that it was kind of ridiculous. I have no idea what caused this but will probably not make it again.

      This was the best banana nut bread I have ever tried. I used pecans because that was what I had. I also didn't have enough bananas and I drained a can of pineapple tidbits and sqeezed all the liquid I could out of them and put them in and let me tell you - that took this over the top. I will never make banana nut bread again without pineapple. Thanks so much for this recipe!!

      I make banana bread with less ingredients and it is delicious. Would those who have made this recipe say it is worth the effort with recipe that it is better then most banana breads? More moist for instance? I like to make simple and good recipes without many ingredients.

      I am not a baker and usually mess up whatever I try. But this was the best banana bread I have ever had and I am so excited!! I didn't have but 3 bananas so I added a 15 oz can of pineapple tidbits that I drained and squeezed out all the liquid I could until they were the same consistency as the bananas and I also used self-rising flour and it was absolutely amazing. Thank you so much for this amazing recipe.

      What can I sub for the cream cheese? I have a lactose issue, and cream cheese is a trigger. But I'm unsure of what else to add. Apple sauce, oil?

      Whenever I make banana bread, I spray the pan with Pam then shake cinnamon sugar all over it before adding the batter. I also sprinkle the cinnamon sugar over the top before I pop it in the oven. It just adds a lovely sweet crust to the bread.

      I made this to the recipe to the tee. and it can out not done. out side was almost burnt. and inside still raw. temp on over has been checked all ok there?

      Jayne: The top crust cracks because the batter on the "outside" cooks faster than the batter in the middle of the loaf. Assuming the oven was preheated, the heat reaches the outside of the blob of raw batter immediately and it starts to cook and kind of seal over making a little crust. However, the middle of the loaf then begins to heat up, which along with the baking soda/baking powder causes it to expand and rise up, which makes the top layer crack.
