      2 Eggs

      1/4 cup corn oil

      3/4 cup sugar

      1 tsp. vanilla

      2 1/2 large very ripe bananas

      1 tsp. baking soda

      l/2 tsp salt

      1 full cup diced fresh strawberries

      2 cups flour

      PREHEAT OVEN TO 350 DEGREES.

      GREASE A 9 X 5 LOAF PAN AND THEN LIGHTLY FLOUR AND
      SET ASIDE

      __________________

      IN A SMALL BOWL, mash the bananas completely.
      Add the baking soda and salt to mashed bananas and mix/
      stirring to dissolve the soda (adding 1/2 tsp. vanilla here)

      IN A POT, beat the eggs, oil, sugar and vanilla (the other 1/2 tsp. here)
      for two minutes.

      ADD the banana mixture to the egg mixture AND BEAT for less than a minute (20 SECONDS) and MIX manually !

      FOLD IN the strawberries and flour. MIX manually until they are
      just well incorporated.

      POUR this mixture into the prepared loaf pan and bake in the preheated oven for 50-55 minutes
      (If knife comes out too wet from middle of loaf, bake a 5-10 minutes more. You be the judge.)

      COOL thoroughly before removing from pan.
