I think... if you had the time ..... it would be good to Grill the Zucchini before stuffing for some extra flavor. Maybe give it a brush with some good EVOO and let the grill work its magic for a few minutes. Then remove, stuff and finish baking.
Made these but with my own toppings and minus the pesto! So yummy and healthy. Next time, I will hollow them a bit more and add more sauce and cheese to give it a more "pizza" taste. I love zucchin
