    Otherwise, you'll likely have everything you need on hand like flour, baking soda, sugar, vanilla, oil, and eggs.

Like most pumpkin bread recipes, it takes about 15 minutes to prepare and 60 minutes to bake. It's a simple marriage of combining the wet and dry ingredients, pouring the batter into a greased loaf pan, and baking it.

    Preparation

    • Preheat oven to 350 degrees Fahrenheit (177 degrees Celsius).
    • Grease a loaf pan with canola oil or baking spray and coat with flour.

    1. Whisk the flour, baking soda, pumpkin pie spice, and salt in a medium-sized mixing bowl.

    You should triple the amount of baking powder for baking soda. For reference, if my recipe calls for 1 teaspoon of baking soda, use 3 teaspoons of baking powder as a replacement.

    Storing pumpkin bread is easy! Let it cool, and you can store at room temperature, in the fridge, or freeze it.

    Room temperature - Wrap it in aluminum foil or a pot towel and store it in a cupboard or a bread bin for up to 4 days.

    Fridge - Transfer to an airtight container or wrap it in plastic wrap. The pumpkin bread will last 5 to 6 days in the fridge.

    Freezer - For freezing this delicious bread, I recommend wrapping it whole in plastic wrap and transferring it to an airtight container. It will last up to 4 months frozen, and it should be thawed in the fridge.

    Ingredients
     

    • 1 ½ cups all purpose flour
    • 2 teaspoons pumpkin pie spice
    • ½ teaspoons salt
    • 1 teaspoons baking soda
    • ¾ cup sugar
    • ½ cup brown sugar
    • ½ cup vegetable oil
    • ½ teaspoons vanilla
    • 1 large egg
    • 2 egg whites
    • 15 ounces pumpkin puree - 1 can

    Instructions

    • Preheat oven to 350 degrees Fahrenheit (177 degrees Celsius) and spray a loaf pan, gently dusting with flour.
    • In a medium size mixing bowl, whisk together flour, pumpkin pie spice, salt and baking soda and set aside.
    • In a large mixing bowl, use an electric mixer to blend together the sugars and vegetable oil, vanilla, egg and egg whites.  Add the pumpkin puree and mix until combined.
    • Start adding the dry ingredients to the wet mix, a little at a time until everything is combined.
    • Pour the batter into the loaf pan and bake for about one hour, or until a toothpick test comes out clean.
    • Allow the bread to cool for about 15 minutes in the pan before removing to a cooling rack to cool completely.
